One of my dishes that garnered me the nickname Big Jon adobo (Because of the frequency i made this dish as well its large flavors). I first made this (unawaringly) in high school when my friend Lucas and I had finished some martial arts session and we WERE HUNGRY.
I then relearned it a few years later in college/university. Simple rule for my recipe:
2 parts soya sauce to 1 part vinegar and a LOT of GARLIC.
Use chicken thigh. (boneless)
carrots
celery
yellow onion
*disclaimer*: i cannot exactly tell you the amount of quantities since most of the stuff I did on feel and logic. I’ll try to come up with a more ‘exact’ recipe.

This looks really yummy!
I’m compiling a list of all the different ways to cook adobo in a quest to find what a true filipino adobo is today, and I’m happy to include your adobo recipe in my article at http://kumain.com/1001-adobo-recipes/. I hope you don’t mind the link from my site to yours =)
